Sauteed Snow Peas & Peppers

Diet friendly, pretty to look at, delicious to eat! Using a yellow or orange sweet pepper gives this dish nice contrast. It's crunchy and filling with a bit of rice. As always, the rice isn't included in the nutritional data.

Ingredients

  • 8 oz snow peas
  • 1 mini sweet pepper
  • 1 scallion
  • 2 cloves garlic
  • 1 tbsp minced ginger
  • 1 tbsp sesame oil
  • 1 tsp low sodium soy sauce
  • 1 tsp golden balsamic vinegar

Directions

  1. Finely mince the garlic and ginger
  2. Slice the scallion and pepper
  3. Heat oil in a non-stick saute pan (a ceramic one is perfect for this)
  4. Add the scallion, ginger, and garlic and cook for about two minutes
  5. Add the snow peas and peppers, cook for about six minutes more
  6. Add the soy sauce and balsamic vinegar, stir well and cook for two more minutes
  7. Serve with Basmati (or Texmati) rice

Tips

  • Using a ceramic pan allows me to get away with only using a small bit of oil!
